High Blean B&B Bainbridge: High Rise Yorkshire Pudding – every time.

Here is a no fail Yorkshire Pudding recipe, guaranteed to rise! Even my friends in the USA manage this recipe for Thanks Giving and Christmas, I get photos every year to prove it!

This will make four good sized portions.


4oz plain flour

3 eggs

Half pint of milk, though a mix of milk and water will also work just fine.

Pinch of salt and pepper to taste.

Goose fat to cook the pudding in.

Mix the three eggs into the flour to make a thick smooth batter. Add the salt and pepper.

Slowly add small amounts of the milk or milk/water mix and whisk this into the batter until smooth. Keep doing this until all the liquid is incorporated into the batter mix. Whisk the batter to get some air into the mix and set aside to rest, ideally for at least a hour.

When you are ready to make the pudding put a tbsp of goose fat into the oven tin and place in a hot oven for 5 minutes to get the fat hot.

When the fat is smoking pour in the pudding mix and then leave for at least 25 minutes. Do not be tempted to open the oven door until the pudding is ready to be take out!

You will now have a perfect high rise Yorkshire Pudding.
